how do you earn those trains?

You can win them in the fountain.

They are regular fountain prizes. YOu can get these by playing the fountain game in town square and also fishing at Paw Park or the Lighthouse. Sometimes you have to fish until your bag is full three times before you get a prize.

after countless trades XD, i finally got all the pieces. the train set is soo cute. gonna start collecting pieces again for another set =0)

You can't, it looks like its one set per person. Sad

yeah i noticed that too =0(, so what i did was i sent a complete set toeach of my side accounts so i can have atleast 4 other train sets.
